Dos Platillos Típicos de Arroz con Habichuelas en R.D.
During
the 10 days of life in La Vega, almost every day we went to "Cocina de
Martha" for Martha and her husband's lunch at noon. We also learned their
Dominican culinary culture.

在一般超市裡，通常會販售袋裝豆子，而在傳統市集會直接秤磅販售。另外，也可以在雜貨店鋪找到多種豆子罐頭 (habichuelas guisadas enlatadas)。
La habichuela es uno de los ingredientes más calves en las gastronomías dominicanas. Se llaman “habichuela” en vez de “frijol” y “judía” en la Rep. Dominicana y se cosechan mucho en la provincia de San Juan situada al sureste de este país. Generalmente se venden en bolsas plásticas en supermercado mientras por máquina de pesaje en mercado tradicional. Además, podemos encontrar habichuelas guisadas enlatadas en el colmado.

How do Dominicans use these beans?
They make stewed beans directly, and put the stewed beef or chicken near white rice on saucer. After preparing the salad, they make the common dish "La Bandera", a typical Dominican Lunch.
On the other hand, they mix the rice and beans to fry them. They make "moro negro" with black beans and "moro de habichuelas rojos" with red beans. The rice of these Moors is drier than the next dish, La bandera, and it has a very tasty and attractive smell. How rich they are! They can be Dominican fried rice similar to the Taiwanese Chǎofàn.
多明尼加人如何食用這些豆子呢？
多國人把豆子直接燉成豆泥醬，燉雞肉或牛肉會擺放在白飯旁邊，最後再加上一盤多明尼加式沙拉，這四元素組成了當地的國民料理「La bandera (旗幟)」，也是常見的中餐型式。(延伸閱讀：如何準備 La Bandera <短片>、<英文食譜介紹>)
第二種煮法，是把豆子與白飯一起拌炒。用黑花豆 (habichuelas negras) 可以煮出黑豆炒飯 (moro negro)，用紅花豆 (habichuelas rojas) 則可煮出紅花豆飯 (moro de habichuelas rojas)。這道主食跟台式炒飯相當類似，飯粒較第一種煮法乾燥，但味道較香，算多明尼加式特有的炒飯。

¿Cómo los dominicanos usan estas habichuelas?
Hacen habichuelas guisadas directamente, y ponen la carne de res o el pollo guisado cerca de arroz blanco en platillo. Después de preparar la ensalada verde, hacen el platillo común “La bandera”, un almuerzo típico dominicano.

Por otro lado, se mezclan el arroz y las habichuelas para freírlos. Hacen “moro negro” con habichuelas negras y “moro de habichuelas rojas” con habichuelas rojas. El arroz de estos moros es más seco que el próximo platillo, La bandera, y tiene olor muy sabroso y atractivo. ¡Qué ricos son! Pueden ser el arroz frito dominicano parecido al Chǎofàn de Taiwán.

Rice with beans is a very delicious dish, but be careful to consume a large amount of starch, when you eat a lot of rice and many beans a day. I start worrying many calories of Dominican dishes, hahaha…
雖然豆子飯很美味，但每天中午吃下這麼多米飯和豆豆，攝取這麼多澱粉，不禁擔心起熱量過多的問題，哈哈~~
El arroz con habichuelas es un platillo muy delicioso, pero tenga cuidado de consumir un gran cantidad de almidón, cuando come mucho arroz y muchas habichuelas al día. Empiezo a preocuparme muchas calorías de los platillos dominicanos, jajaja… 😅
